Pumpkin Pumpkin and Gluten Free Chocolate Cake

My family had a Thanksgiving party this weekend since we won't all be able to get together on the actual Thanksgiving Day. My step-mom asked me to make a chocolate cake. She has gone gluten-free so I wanted to make a cake that she would be able to enjoy with us so I turned it into a gluten-free chocolate cake. It was really good and really rich! I had one person say it was a little grainy, but no one else thought so.

Of course, you can't have a Thanksgiving party without something pumpkin so I added a pumpkin cake on top. SInce this was for us, I tried to go a little heatlthier and used whole white wheat flour which works well with a spice cake like this. I also chose taste over looks and made cream cheese frosting. I wanted to mold the frosting to make it look more even more like a pumpkin, but that was just not happening with this soft creamy frosting! It wa worth it, though. It was so delicious and several people came back asking for another slice. We had 9 adults and 5 kids, and we ate half the pumpkin and about a quarter of the chocolate so I would say this cake would easily feed 25-30 people.

I would love to do your holliday cake! And keep in mind, I can turn any cake into a gluten-free treat for  you!

Hello Kitty Jungle Print Cake

This cake was so much fun to make! My friend gave me the little stuffed Hello Kitty to put on top for her daughter's 8th birthday so I deisgned the cake around that.

The bottom tier is vanilla almond butter cake and the top is chocolate. Both are filled and covered with delicious light Swiss Buttercream with just a few fondant details.
